Nadia’s avocado pea smash

To go with our previous gardening tip blog on peas, here’s a super quick and delicious recipe:

Serve this smash as a dip with crackers or tortilla chips, or dollop on toast and eat as is, or with a poached egg for a lovely brunch.

Prep time: 10 minutes

INGREDIENTS
•¾ cup peas or shelled broad beans
zest and juice of ½ lemon
•1 firm-ripe avocado, chopped 🥑
•¾ cup chopped fresh herbs, e.g. mint, coriander, parsley dill, chives.

METHOD
1. Place peas/broad beans in a heatproof bowl.
2. Cover with boiling water and leave for a few minutes, then drain.
3. Use a masher to crush peas/broad beans with lemon zest and juice.
4. Add the avocado and herbs and crush some more. Season to taste with salt and extra lemon juice if needed.
